Worked up a load using Barnes 150gr TTSX and it was only running about 2875fps 60 grains H4831sc. Coal was 3.245. My barrel is 22 inches. Had 5 rounds the size of quarter. With this information, am I reaching the full potential of the .280AI. If not what powder should I be trying instead?

With 5 rounds the size of a quarter (100 yards??) and a 150 gr bullet you should be good for anything in North America with the exception of the big bears, brown or white. Your chrony speed of 2875 out of a 22 inch BBL tells me the round is zipping out their pretty good as a 24" BBL would put you close to 3,000 fps. If it were me I'd call it good and load up a hundred or two.
